Chicken Ramen [great for if your under the weather or have a cold]I adore this recipe expecially when i feel ill, it can pack such a punch.
INGREDIENTS
you will need
Red chilli paste
sugar
sesame oil
light soy sauce
dark soy sauce
rice wine
chicken breasts
noodles
sweetcorn
mushrooms
beansprouts
ginger
garlic
vinegar
hot chilli sauce
chicken stock
coriander
one red onion
2 chillis [unless you want more]
lemon
peppers [ie red/green or yellow or mix]
spring onions
2 eggs
Preparing the chickenFor this i generally use 4 chicken breasts as you can freeze the left overs for another day.
Prepare in a bowl the following
2 tablespoons red chilli paste
2 teaspoons of sugar
1 teaspoon of sesame oil
dash of light soy sauce
dash of dark soy sauce
dash of rice wine
Once you have that mix it all up into a light paste and then coat each chicken breast with it, I tend to double up that ammount normally as mike loves it.
Do not cook right away, i wrap the chicken in tin tin foil and place it in the fridge for a hour.
After a hour leaving it to soak up the juice cook it for a hour.
